Rosemary and Sea Salt Focaccia

This is so yummy and great for any occasion. Nothing is better than a fresh loaf of bread straight from the oven. This bread is very simple and can be made with no fuss as there is no yeast, meaning you don’t need to knead the loaf or wait for it to rise.

Makes 8 slices Preparatio­n time 15 mins Cooking time 20 mins

1 cup ground almonds or almond meal ½ cup arrowroot 1 teaspoon baking soda

1 teaspoon dried or fresh rosemary 1 teaspoon sea salt 3 eggs

2 tablespoon­s apple cider vinegar 2 tablespoon­s coconut oil, melted

1 teaspoon sea salt, for garnish 1 teaspoon rosemary, for garnish

Preheat the oven to 180 degrees celsius and prepare a shallow round baking dish by lining it with baking paper. In a large bowl or food processor combine the ground almonds, arrowroot, baking soda, rosemary and sea salt. In a separate bowl whisk the eggs, apple cider vinegar and coconut oil together, and then add to the dry ingredient­s. Combine all the ingredient­s and pour the mixture into the lined baking dish. Sprinkle with the extra rosemary and sea salt and place in the oven to bake for 20 minutes.
