Coconut Sambal

Serves 8 Prepare 10-15 minutes 1 cup shredded coconut ⅔ cup plain yoghurt ¼ cup coriander, chopped ¼ cup mint, chopped, plus

extra to garnish 2 garlic cloves, crushed 1 small red onion, finely

chopped 1 green chilli, finely chopped 1 tsp cumin 1 tsp turmeric juice of 1 lime ½ tsp salt ½ cup roasted peanuts

chopped (optional) Mix ingredient­s together in small batches. Use a mortar and pestle if you have one, otherwise blitz in a food processor, but keep it chunky. The flavours will develop over time. Garnish with fresh mint leaves.
