A des­ti­na­tion for food­ies, Ga­ia­tree Sanc­tu­ary is an or­ganic spice plan­ta­tion and nec­tar lab open for day tours. In­gre­di­ents for its three­course veg­e­tar­ian din­ing ex­pe­ri­ence of in­gre­di­ent­driven Fiji cui­sine are picked from the garden the same day they’re served up. All sauces, dress­ings, herbal in­fu­sions, smooth­ies and juices are made in-house. You’ll learn about edi­ble flow­ers, na­tive greens and rare spice leaves. The hill­top gar­dens in­clude a de­vel­op­ing food for­est with more than 50 va­ri­eties of fruit trees, holis­tic herbs and foods in­clud­ing co­coa, acai, vanilla, star­fruit and turmeric. After a guided tour through the lush gar­dens, set­tle into the col­lab­o­ra­tive kitchen and help pre­pare lunch, or re­lax with a se­lec­tion of chilled ex­otic nec­tars (think wa­ter­melon juice in­fused with lemon basil and shaved ice) while soak­ing up stun­ning ocean views.
