VEG­ETABLE NA­CHO BEANS

Makes 8 X 1 cup serves

STEP 1— ONION MIX

1 ta­ble­spoon oil 1 onion chopped 3 cloves gar­lic crushed 2 stalks cel­ery sliced 1 or­ange bell pep­per (cap­sicum) diced

1⁄ 1/2 cup cilantro (fresh 2 co­rian­der) stalks

1⁄ 1/2 red chilli chopped finely 2 or 1 Tbsp chilli paste Add oil to saucepan and saute oil, onion, gar­lic, cel­ery, bell pep­per, cilantro stalks and chilli for 5min­utes or un­til soft.

STEP 2— BEANS

400g can toma­toes chopped 400g can toma­toes crushed 400g can but­ter beans 400g can kid­ney beans 400g can corn ker­nels 2 zuc­chini (cour­gettes) grated Add toma­toes, all beans, corn, grated zuc­chini and heat through.

STEP 3— FIN­ISH

2 Tbsp lime juice Gar­nish: cilantro (fresh co­rian­der) Op­tional gar­nish: Cashew and lime, aioli or other creamy dress­ing Add lime juice and gar­nish with cilantro and cashew and lime aioli.
