IN­GRE­DI­ENTS

BASE: 1 cup al­monds 3/4 3⁄4 cup dates 1/4 1⁄4 cup des­ic­cated co­conut

TOP­PING: 1 1⁄2 cups cashew nuts raw 4 Tbsp lime juice 1/4 1⁄4 cup co­conut oil melted 3/4 3⁄4 cup wa­ter 3 Tbsp liq­uid honey 1 cup frozen straw­ber­ries Gar­nish: blue­ber­ries Gar­nish: mint

METHOD

Place al­monds, dates and co­conut into food pro­ces­sor and blend un­til a fine tex­ture. Press into serv­ing glasses to cre­ate the base. In a blender add cashews, lime juice, co­conut oil, wa­ter and honey and blend un­til mix­ture is smooth and creamy. Add straw­ber­ries and blend well, scrap­ing down the sides of the blender as needed. Pour mix­ture onto the base and spread evenly. Place in freezer to set. Can be stored in the fridge once set.
