FISH TA­COS WITH VEGGIE SALSA AND LEMON MAYO

Veggie salsa

1 cap­sicum, core and seeds re­moved and diced 1cm 1 tomato, diced 1cm 2 spring onions, thinly sliced Zest of 1 lemon Juice of a lemon

Fish ta­cos

cup plain flour 2 ta­ble­spoons fish taco sea­son­ing (see recipe be­low)

600g skin­less, bone­less, white fish fil­lets

10 tor­tilla wraps (store-bought)

tea­spoon ground chilli 1 tea­spoon ground cumin 1 tea­spoon onion pow­der 1 tea­spoon smoked pa­prika

Lemon mayo
