Ev­ery­one knows that veg­eta­bles are the health­i­est things we can eat. They’re also fun to grow. And some of them are per­fect for do­ing cool sci­ence ex­per­i­ments! Take a pur­ple cab­bage for ex­am­ple … an­tho­cyanin, Pur­ple cab­bage con­tains a pig­ment that gives it that beau­ti­ful colour. An­tho­cyanin turns dif­fer­ent colours when you mix it with dif­fer­ent liq­uids. It’s what sci­en­tists call a ‘pH in­di­ca­tor’.
