So­nia and Lau­rent Hau­monte know the se­cret to bak­ing mac­arons, crois­sants and baguettes to French per­fec­tion in the face of Auck­land’s hu­mid­ity. It was one of the big­gest chal­lenges they en­coun­tered upon mov­ing to Auck­land from Paris five years ago, but they re­fused to give in to im­port­ing frozen equiv­a­lents. They fit­ted out their sim­ple but so­phis­ti­cated Par­nell pâtis­serie them­selves and the main at­trac­tion is a cab­i­net of Cor­don Bleu­trained So­nia’s magnificent gateaux.
