Homemade tangelo & thyme soda
Ready in 30 minutes | Makes 6-8 glasses | DF | GF
2 cups freshly squeezed tangelo juice (from about 2kg tangelos)
¼ cup caster sugar
3 whole sprigs thyme
Ice cubes 2 litres soda water or sparkling water
1 tangelo, sliced (optional) Extra thyme sprigs, tips only (optional)
1 Combine tangelo juice, sugar and thyme in a pot and bring to a simmer. Cook for about 20 minutes until beginning to turn syrupy – there should be about ½ cup of syrup. Swirl pot regularly to prevent burning.
2 Strain through a sieve into a bowl and allow to cool.
3 When ready to serve, place a few ice cubes in each glass. Mix tangelo syrup and soda water in a large jug and pour into glasses. Garnish with a slice of tangelo and a sprig of thyme if desired.
