Homemade tan­gelo & thyme soda

Ready in 30 min­utes | Makes 6-8 glasses | DF | GF

2 cups freshly squeezed tan­gelo juice (from about 2kg tan­ge­los)

¼ cup caster sugar

3 whole sprigs thyme

TO SERVE

Ice cubes 2 litres soda water or sparkling water

1 tan­gelo, sliced (op­tional) Ex­tra thyme sprigs, tips only (op­tional)

1 Com­bine tan­gelo juice, sugar and thyme in a pot and bring to a sim­mer. Cook for about 20 min­utes un­til be­gin­ning to turn syrupy – there should be about ½ cup of syrup. Swirl pot reg­u­larly to pre­vent burn­ing.

2 Strain through a sieve into a bowl and al­low to cool.

3 When ready to serve, place a few ice cubes in each glass. Mix tan­gelo syrup and soda water in a large jug and pour into glasses. Gar­nish with a slice of tan­gelo and a sprig of thyme if de­sired.
