Thyme-roasted portabello mushrooms
Ready in 25 minutes | Serves 6 | DF | GF
12 portabello mushrooms, stalks intact
4 cloves garlic, roughly chopped
2 Tbsp balsamic vinegar
1 tsp runny honey
3 Tbsp olive oil
8 sprigs fresh thyme
1 mushroomsPreheat oven with to a 220°C. damp Clean paper towel and place (gill-side up) in an ovenproof dish.
2 Combine garlic, balsamic vinegar, honey and olive oil in a small bowl. Drizzle over the mushrooms. Scatter whole thyme sprigs on top. 3 Roast mushrooms for 12-15 minutes until just cooked through.
