Thyme-roasted porta­bello mush­rooms

12 porta­bello mush­rooms, stalks in­tact

4 cloves gar­lic, roughly chopped

2 Tbsp bal­samic vine­gar

1 tsp runny honey

3 Tbsp olive oil

8 sprigs fresh thyme

1 mush­room­sPre­heat oven with to a 220°C. damp Clean pa­per towel and place (gill-side up) in an oven­proof dish.

2 Com­bine gar­lic, bal­samic vine­gar, honey and olive oil in a small bowl. Driz­zle over the mush­rooms. Scat­ter whole thyme sprigs on top. 3 Roast mush­rooms for 12-15 min­utes un­til just cooked through.
