Take your favourite fam­ily meals to the next level with mush­rooms

Nu­tri­tion­ally dense and as ver­sa­tile as any­thing, mush­rooms added to savoury dishes will not only bulk them out and in­crease the flavours but give you a boost of es­sen­tial vi­ta­mins and min­er­als too. With the first day of spring mark­ing the start of mush­room sea­son we de­cided to get cre­ative in the kitchen.

Smoked salmon, mush­room & rico a fri ata

Ready in 45 min­utes | Serves 6-8 | GF

1 Tbsp but­ter 200g white or brown but­ton mush­rooms, thinly sliced 200g fresh ri­cotta ⅓ cup thinly sliced spring onions 200g hot-smoked salmon, flaked 6 large eggs 1 cup cream 2 Tbsp grated parme­san (op­tional) Baby rocket leaves, to serve

1 Pre­heat oven to 180°C. Melt bu…er in a deep, oven­proof fry­ing pan over medium heat. Add mush­rooms and cook for 5 min­utes or un­til brown. Take off heat.

2 Lightly com­bine rico…a, onion and salmon, sea­son with salt and pep­per and add to pan. Whisk eggs and cream and add to pan. Sprin­kle with parme­san, if us­ing. (If you don’t have an oven­proof pan, trans­fer mush­rooms to a greased 20cm x 30cm bak­ing dish at end of step 1.)

3 Bake for about 25 min­utes or un­til well puffed. Slice and top with rocket to serve.
