LEAN BEEF FAJITAS
1 To make the salsa bring pan to medium heat, add a lit tle olive oil and onion and garlic, sauté for five minutes. 2 Add tomatoes, capsicum, water and oregano and simmer for 10 minutes. Taste and season with salt and pepper. Remove from heat and set aside. 3 Mix the spices together in a small bowls. Sprinkle over the steak and rub into the flesh. Season with salt and pepper. 4 Heat a lit tle olive oil in a pan over high heat. Sear the steak for about two minutes each side until medium rare (or longer if you prefer). 5 Remove from the pan and rest for five to seven minutes. Cut into thin strips. 6 Heat the tortillas according o the packet direc tions. 7 To serve, place a few strips of beef on to a tortilla, add salsa, lettuce, cucumber, sour cream and guacamole. Finish with a squeeze of lime.
