1 To make the salsa bring pan to medium heat, add a lit tle olive oil and onion and gar­lic, sauté for five min­utes. 2 Add toma­toes, cap­sicum, wa­ter and oregano and sim­mer for 10 min­utes. Taste and sea­son with salt and pep­per. Re­move from heat and set aside. 3 Mix the spices to­gether in a small bowls. Sprin­kle over the steak and rub into the flesh. Sea­son with salt and pep­per. 4 Heat a lit tle olive oil in a pan over high heat. Sear the steak for about two min­utes each side un­til medium rare (or longer if you pre­fer). 5 Re­move from the pan and rest for five to seven min­utes. Cut into thin strips. 6 Heat the tor­tillas ac­cord­ing o the packet di­rec tions. 7 To serve, place a few strips of beef on to a tor­tilla, add salsa, let­tuce, cu­cum­ber, sour cream and gua­camole. Fin­ish with a squeeze of lime.

Serve with Kim Craw­ford First Pick Pinot Gris.
