Poached chicken salad
Well-poached chicken is unbeatable in this refreshing salad.
45 minutes ready to cook, add the chicken breasts and marinade and poach for 15 minutes with the liquid just shimmering below boiling point. When just cooked through, remove from the poaching liquid. Cool and shred.
Place all the salad ingredients except the cashew nuts and coconut in a serving bowl and scatter with shredded chicken. Combine all the dressing ingredients, taste, and adjust the flavours to your liking. Dress the chicken and gently toss everything together. Garnish with toasted cashew nuts and coconut.
