Poached chicken salad

Well-poached chicken is un­beat­able in this refreshing salad.

45 min­utes ready to cook, add the chicken breasts and mari­nade and poach for 15 min­utes with the liq­uid just shim­mer­ing be­low boil­ing point. When just cooked through, re­move from the poach­ing liq­uid. Cool and shred.

Place all the salad in­gre­di­ents ex­cept the cashew nuts and co­conut in a serv­ing bowl and scat­ter with shred­ded chicken. Com­bine all the dress­ing in­gre­di­ents, taste, and ad­just the flavours to your lik­ing. Dress the chicken and gen­tly toss ev­ery­thing to­gether. Garnish with toasted cashew nuts and co­conut.
