Nici’s all about easy dinners this week and our favourite foodie has shared a few pantry staples she keeps on hand. To create a speedy masterpiec­e without going to the supermarke­t, here’s what’s in her kitchen:

• Frozen chicken tenders, beef or pork schnitzel and good-quality breakfast or other thin sausages (add to risottos, pasta or pizza) – they all defrost fast!

• Quality olive oil, lemons and nuts can be tossed through greens, pasta or roasted veges to make a complete meal. • Sour cream is invaluable as it lasts well in the fridge and can be sweetened with brown sugar to transform some warmed fruit, crushed biscuits or cake crumbs into a delicious dessert.
