Make quince vodka

Quince trees are pro­lific. The fruit is ined­i­ble raw but once cooked have melt­ing flesh. Slice and bot­tle them like pears or make flavoured vodka. Grate or roughly chop 4-6 quinces in a food pro­ces­sor, place in a 2L plas­tic con­tainer, add 1-2 cups sugar and cover with cheap vodka. Shake from time to time. It’s ready to strain and drink after six months – and it’s de­li­cious.
