Make quince vodka
Quince trees are prolific. The fruit is inedible raw but once cooked have melting flesh. Slice and bottle them like pears or make flavoured vodka. Grate or roughly chop 4-6 quinces in a food processor, place in a 2L plastic container, add 1-2 cups sugar and cover with cheap vodka. Shake from time to time. It’s ready to strain and drink after six months – and it’s delicious.
