This berry dessert is ideal for summer garden parties.
Ingredients: • 2 2/3 cups raspberries • 1/3 cup sugar • 2 egg whites • 2 teaspoons lemon juice • 1 cup icing sugar. Purée half the raspberries, press through a sieve and bring to the boil with sugar. Simmer 3-4 minutes. Remove from heat and cool. Preheat oven to 130°C and line a baking tray with baking paper. Whisk egg whites with lemon juice until stiff, gradually adding the icing sugar. Beat until glossy. Fold in some of the berry purée to colour. Spoon into a piping bag. Arrange remaining berries on baking tray and pipe meringue on top. Bake in oven for 40 minutes until meringues are crispy. Turn off heat, open door and leave meringues until cold.
Serve with icing sugar and puréed berries.
