Make your own flavoursome herb crackers.
Ingredients: • 1 cup chickpea flour • ¼ cup water
• 2 tablespoons sunflower seeds • 2 tablespoons ground flaxseed • 1 teaspoon dried rosemary
• ½ teaspoon dried thyme • ½ teaspoon olive oil
• ½ teaspoon salt • 2 cloves garlic, minced
• 1/8 teaspoon baking soda
Heat oven to 180°C. Combine all ingredients and mix until a dough forms. Add a bit more water if the dough is dry, or chickpea flour if it’s too wet. The dough will be sticky. Place the dough between two sheets of baking paper and roll out to 6mm thick. Remove the top layer of baking paper and cut dough into squares or triangles, poking holes in each cracker to prevent them from puffing. Bake for 15-20 minutes until golden brown.
