DILL: Let dill flowers set seed, then hang upside down to dry and use the seed or whole flowers in pickles.

FLOWERING CHINESE CABBAGE: Also known as choy sum. Unlike most Asian greens, the flowering stalks rather than the leaves are eaten.

ORACH: Like close relative spinach, orach plants tend to bolt and send out flowering spikes if they dry out.

LEEK: These ball-shaped flowers are loved by bees and other useful pollinators. Leave them on the plant, and leeks will self-seed (prolifically!)

QUINOA: This grain’s flowers are psychedelic reds, pinks, oranges and purples. The pigments responsible for the bright hues are called betalains – they also cause the bright colours in rainbow chard and amaranthus.

RADISH: If radishes bolt (often because they dry out) they will produce masses of small edible flowers.
