FIG, MELON & SERRANO HAM SALAD
This fresh, seasonal salad looks so pretty on the plate. Arrange slices of Serrano ham, wedges of peeled rockmelon and quartered figs on a platter. Crumble over some goat’s feta and scatter over a good handful of mint leaves. Finish with a squeeze of lemon juice, a good drizzle of olive oil and season with freshly ground black pepper.
