GLAZED BANANA FRENCH TOAST SAND­WICH

For a cafe- style brunch with the wow fac­tor, peel 4 ba­nanas and cut into thin di­ag­o­nal slices. Place on an oven tray and sprin­kle gen­er­ously with ic­ing sugar and cin­na­mon to taste. Grill un­til start­ing to caramelise.

Mix 2 eggs with a lit­tle milk flavoured with honey and a good pinch of cin­na­mon.

Cut 8 gen­er­ous slices of banana bread ( bought or home-made), dip them into the egg mix­ture on both sides then cook in an oiled non- stick pan un­til golden on both sides.

Serve sand­wiched with ri­cotta and the grilled banana, topped with a lit­tle more ri­cotta, re­main­ing banana, a few berries if you have them and a driz­zle of liq­uid honey. Serves 4
