GLAZED BANANA FRENCH TOAST SANDWICH
For a cafe- style brunch with the wow factor, peel 4 bananas and cut into thin diagonal slices. Place on an oven tray and sprinkle generously with icing sugar and cinnamon to taste. Grill until starting to caramelise.
Mix 2 eggs with a little milk flavoured with honey and a good pinch of cinnamon.
Cut 8 generous slices of banana bread ( bought or home-made), dip them into the egg mixture on both sides then cook in an oiled non- stick pan until golden on both sides.
Serve sandwiched with ricotta and the grilled banana, topped with a little more ricotta, remaining banana, a few berries if you have them and a drizzle of liquid honey. Serves 4
