SAVOURY CUCUMBER & LIME GRANITA
cucumber, lime, caster sugar
Peel and remove the seeds from 2 telegraph cucumbers. Roughly chop the flesh and place in a blender with the zest and juice of 1 lime, 1/4 cup water, and caster sugar and salt to taste. Blend to a fine pulp. Transfer to a shallow baking pan and freeze completely. Remove from the freezer and rake with a fork. Serve spooned over fresh oysters or scattered over chilled seafood dishes.
