CHILLED CU­CUM­BER & AV­O­CADO SOUP

cu­cum­ber, av­o­cado, co­rian­der, spring

onions, lime, fish sauce, co­conut cream

Place in a blender 1 peeled and de-seeded cu­cum­ber, 1 chopped av­o­cado, a small hand­ful of co­rian­der leaves, 3 spring onions, the juice of a large lime and 1 cup chilled wa­ter. Add a dash of fish sauce and salt and pep­per to taste. Blend un­til smooth. Mix in 1 cup co­conut cream and ad­just sea­son­ing. Chill un­til ready to serve. Gar­nish with finely chopped cubes of cu­cum­ber, grilled prawns and pea shoots if de­sired. Serves 8 in tast­ing glasses
