This is top-notch gua­camole amped up with some chunky, tasty top­pings. Serve it with corn chips as a starter, or as a side dish to your Mex­i­can feast.


4 ripe av­o­ca­dos, roughly mashed

2 cloves gar­lic, crushed

1 tea­spoon red chilli flakes

2 limes, juiced

1 tea­spoon flaky sea salt

½ tea­spoon freshly ground black pep­per ½ tea­spoon ground cumin

Hand­ful of fresh co­rian­der leaves,

roughly chopped


1 cob corn, brushed with oil and

grilled or bar­be­cued

1 medium red onion, very finely diced Sliced pick­led jalapeno

1 pun­net cherry to­ma­toes, halved

Com­bine gua­camole in­gre­di­ents in a bowl, ad­just­ing sea­son­ing and lime juice to taste. Serve in a large bowl topped with grilled corn ker­nels and the other gar­nishes. Serves 6-8 as a starter or side dish
