sun-dried to­ma­toes, black olives, bal­samic vine­gar, maple syrup, whole­grain mus­tard, thyme, oregano, olive oil

This dress­ing works well with lamb, beef, chicken and fish dishes and is par­tic­u­larly good driz­zled over fresh as­para­gus, scat­tered with a few pine nuts and a lit­tle shaved parme­san. Very finely chop 100g sun-dried to­ma­toes and 70g black pit­ted olives. Com­bine with 125ml bal­samic vine­gar, a lit­tle maple syrup and whole­grain mus­tard, a ta­ble­spoon each of fresh chopped thyme and oregano leaves and 100ml olive oil. Sea­son to taste. Makes about 1 cup, serves 6
