This is par­tic­u­larly good in dishes with veni­son, beet­root or as­para­gus. Place

100g fresh or frozen raspberrie­s, chilli paste to taste, a crushed clove of gar­lic,

11/2 ta­ble­spoons cider vine­gar and 1/4 cup olive oil in a small pan. Cook over a low heat un­til the berries fall apart. Sea­son to taste and whisk well be­fore serv­ing warm.

Makes about 3/4 cup, serves 4-6
