BANG BANG PRAWNS
mayonnaise, sweet chilli sauce, cider vinegar, panko, cornflour, Cajun seasoning, prawns, oil, lettuce
For about 400g large prawns: Mix together 1/2 cup mayonnaise, 3 tablespoons sweet chilli sauce and a dash of cider vinegar. In a separate bowl combine 1 cup panko crumbs, 1/4 cup cornflour and 2 tablespoons Cajun seasoning mix, and season to taste. Mix a third of the mayonnaise mixture through the raw prawns then coat the prawns in the crumb mixture. Fry in hot oil until golden. Serve hot from the pan in lettuce cups with the remaining mayonnaise.
