may­on­naise, sweet chilli sauce, cider vine­gar, panko, corn­flour, Ca­jun sea­son­ing, prawns, oil, let­tuce

For about 400g large prawns: Mix to­gether 1/2 cup may­on­naise, 3 ta­ble­spoons sweet chilli sauce and a dash of cider vine­gar. In a sep­a­rate bowl com­bine 1 cup panko crumbs, 1/4 cup corn­flour and 2 ta­ble­spoons Ca­jun sea­son­ing mix, and sea­son to taste. Mix a third of the may­on­naise mix­ture through the raw prawns then coat the prawns in the crumb mix­ture. Fry in hot oil un­til golden. Serve hot from the pan in let­tuce cups with the re­main­ing may­on­naise.
