Process to­gether 500g chopped raw prawn meat with an egg white, 3 ta­ble­spoons rice flour, the zest of a lime, 2 chopped spring onions, wasabi paste and fish sauce to taste, some grated gin­ger and a small hand­ful of chopped co­rian­der leaves. Fry gen­er­ous ta­ble­spoon­fuls of mix­ture in hot oil, turn­ing once. Serve warm with a sim­ple lime-based dip­ping sauce (try sweet chilli sauce thinned with lime juice). Makes about 20 small cakes
