Toss raw, tail-on prawns with olive oil and crushed gar­lic then thread onto soaked skew­ers and leave to mar­i­nate for 30 min­utes. Cook on a hot pan or grill plate be­fore serv­ing scat­tered with gremolata, made by com­bin­ing a clove of crushed gar­lic with sev­eral ta­ble­spoons of chopped pars­ley and the finely grated zest of a le­mon.
