vanilla ice cream, co­conut cream, co­conut liqueur, des­ic­cated and thread co­conut, co­conut sugar, vanilla, co­conut oil, flaky sea salt

Soften vanilla ice cream and mix in a lit­tle co­conut cream, co­conut liqueur and des­ic­cated co­conut. Form into balls and roll in a mix of toasted des­ic­cated co­conut and co­conut thread. Freeze. Make the sauce by com­bin­ing 1/2 cup each co­conut sugar and cold wa­ter. Stir over heat un­til mix­ture starts to boil. Add 1/2 cup co­conut cream and sim­mer un­til mix­ture thick­ens enough to thickly coat the back of a spoon. Take off heat and mix in a lit­tle vanilla ex­tract, 1 tea­spoon co­conut oil and a good pinch of flaky sea salt. Cool be­fore serv­ing over the ice cream balls.
