COCONUT ICE CREAM
WITH CARAMEL SAUCE
vanilla ice cream, coconut cream, coconut liqueur, desiccated and thread coconut, coconut sugar, vanilla, coconut oil, flaky sea salt
Soften vanilla ice cream and mix in a little coconut cream, coconut liqueur and desiccated coconut. Form into balls and roll in a mix of toasted desiccated coconut and coconut thread. Freeze. Make the sauce by combining 1/2 cup each coconut sugar and cold water. Stir over heat until mixture starts to boil. Add 1/2 cup coconut cream and simmer until mixture thickens enough to thickly coat the back of a spoon. Take off heat and mix in a little vanilla extract, 1 teaspoon coconut oil and a good pinch of flaky sea salt. Cool before serving over the ice cream balls.
