Lightly whisk 2 egg whites. Add a crushed clove of gar­lic, a pinch of chilli pow­der,

1/4 cup each co­conut thread and corn­flour, 1 ta­ble­spoon fish sauce and a good sprin­kle of black and white se­same seeds. Add

400g large raw prawns (tails on). Chill 30 min­utes then fry in veg­etable oil un­til golden. Serve with the dip­ping sauce made by com­bin­ing 1 cup may­on­naise with a lit­tle co­conut cream, a crushed clove of gar­lic, the zest and juice of 2 limes, sweet chilli sauce to taste and a good hand­ful of chopped co­rian­der leaves. Sea­son to taste and chill un­til needed.
