Fiona’s baking notes:
● I like to use siliconised baking paper to line baking trays.
● I prefer to use unsalted butter in baking so I can control the exact amount of salt. If all you have is salted butter, reduce the instructed salt amount by half.
● All my oven settings are fanbake – for standard ovens increase the temperature by 15-20°C.
● The nuts I like to use are natural, unblanched (skin on), and the flour is plain organic flour (unless otherwise specified). Eggs are free-range, always.
