Fiona’s bak­ing notes:

● I like to use sil­i­conised bak­ing pa­per to line bak­ing trays.

● I pre­fer to use un­salted but­ter in bak­ing so I can con­trol the ex­act amount of salt. If all you have is salted but­ter, re­duce the in­structed salt amount by half.

● All my oven set­tings are fan­bake – for stan­dard ovens in­crease the tem­per­a­ture by 15-20°C.

● The nuts I like to use are nat­u­ral, un­blanched (skin on), and the flour is plain or­ganic flour (un­less oth­er­wise spec­i­fied). Eggs are free-range, al­ways.
