Around 65 per cent of New Zealand’s wine pro­duc­tion is sauvi­gnon blanc and the ma­jor­ity of savvy drinkers en­joy the clas­sic herba­ceous, un­oaked style. Per­son­ally, I love sauvi­gnon blanc that has been crafted on its way to the bot­tle, such as bar­rel fer­ment­ing, which makes the wine more el­e­gant, smooth and vi­brant.
