Silverbeet & Pea Mash
Greens mashed with potato makes a delicious and creamy all-in-one vegetable side dish.
1 small potato, peeled and cut into thin slices 1 clove garlic, peeled
4 cups frozen baby peas
4 large silverbeet leaves, stems removed,
very finely chopped
2 tablespoons butter
¼ cup sour cream
Freshly grated nutmeg, sea salt and
black pepper Place potato and garlic in a saucepan with about ½ cup water and bring to the boil. Cook several minutes.
Add peas, cover pot and bring to the boil, stirring once or twice.
Remove lid, add butter and silverbeet and stir over heat for several minutes until the silverbeet is cooked.
Take off heat and add sour cream. Season to taste with nutmeg, salt and pepper. Roughly mash using a hand-held blender or potato masher, ensuring there are no lumps of potato. Serves 4
