Miso Pea Soup

onion, gar­lic, but­ter, peas, stock, miso, white wine, wasabi peas, sesame seeds, mi­cro­greens

Sauté a chopped onion in but­ter with sev­eral cloves of chopped gar­lic. Add 3 cups frozen peas, 4 cups veg­etable or chicken stock and a heaped ta­ble­spoon of white miso paste dis­solved in a lit­tle white wine. Cook for 25 min­utes then process un­til smooth and ad­just the sea­son­ing to taste. Serve topped with a few wasabi peas, toasted sesame seeds and mi­cro­greens. Serves 4
