Brew­ing gi­ant Lion’s new Christchurch ven­ture is an in­dus­trial-look, sus­tain­able mi­cro­brew­ery with a lovely vibe. The Fer­men­tist’s head brewer Kirsten Tay­lor (pic­tured) has free rein to run it her way and is lov­ing the chance to branch out. “This is a very dif­fer­ent ap­proach to run­ning a brew­ery and we are ex­per­i­ment­ing with fer­men­ta­tion, savoury styles and so on,” says Kirsten, whose cur­rent go-to drinks are The Fer­men­tist’s Kiwi Pale Ale and Ber­liner Weisse, a sour wheat beer.
