Brewing giant Lion’s new Christchurch venture is an industrial-look, sustainable microbrewery with a lovely vibe. The Fermentist’s head brewer Kirsten Taylor (pictured) has free rein to run it her way and is loving the chance to branch out. “This is a very different approach to running a brewery and we are experimenting with fermentation, savoury styles and so on,” says Kirsten, whose current go-to drinks are The Fermentist’s Kiwi Pale Ale and Berliner Weisse, a sour wheat beer.
