This is a bril­liant, su­per light salad. The cau­li­flower acts like cous­cous, soak­ing up the le­mony thyme flavours of the dress­ing.

½ medium cau­li­flower, stem and leaves re­moved

1 tele­graph cu­cum­ber, skin on, halved, de-seeded and cut into bite-sized pieces

1 pun­net cherry toma­toes, halved

1 red pep­per, de-seeded and cut into bite-sized pieces 2 spring onions, thinly sliced

½ cup chopped mint

½ cup chopped flat-leaf pars­ley

½ tea­spoon salt and grinds of pep­per

½ cup Lemon Sumac Dress­ing

In a food pro­ces­sor, blitz chunks of cau­li­flower to a rice-like crumb. Place in a large salad bowl with all the chopped veg­eta­bles, herbs and salt and pep­per. Pour over the Lemon Sumac Dress­ing and toss to com­bine. This salad is best served within a cou­ple of hours. Serves 6
