Mat, the in­au­gu­ral win­ner of the Sil­ver Fern Farms Res­tau­rant Awards in 2013 ( pre­vi­ously Premier Se­lec­tion Awards), is re­garded as one of New Zealand’s lead­ing chefs and Palate is one of New Zealand’s most awarded restau­rants. Mat is com­mit­ted to cook­ing with sea­sonal, lo­cal pro­duce and it is his pas­sion for qual­ity in­gre­di­ents that he cred­its with his suc­cess. “Cus­tomers are look­ing for that unique taste ex­pe­ri­ence but the story of the pro­duce is also on their mind. That is why I want to know how the an­i­mals have been raised.”
