■ 2 good-sized parsnips

■ 1 tbsp olive oil

■ 1 tsp ground co­rian­der or other

spice pow­der

■ Salt

■ Freshly ground black pep­per

Pre-heat oven to 225°C. Peel the parsnips, cut in half and thinly slice length­ways, or cut into chip-thick­ness lengths. In a bowl, mix the oil and the spices, to­gether with a gen­er­ous help­ing of freshly ground black pep­per and salt - about an­other tea­spoon in to­tal. Toss the cut parsnips in the oil and spice mix­ture to coat well. Line an oven tray with bak­ing pa­per and spread the oil­coated parsnips in a sin­gle layer. Bake in the oven un­til cooked, about 30 min­utes, turn­ing once or twice while cooking.
