CHEESE & CHILLI WHEY SCONES
Preheat the oven to 200°C, on fan bake. Sift the flour, baking powder, and salt into a bowl and stir in the chilli. Cut the butter into small chunks and add to the bowl. With clean hands, work the butter very lightly into the flour mixture to form sandy looking crumbs. Add the cheese and stir until just mixed – be careful not to over-mix. Add the whey to the dry ingredients and mix with a knife. Keep the mixture moist. Add more whey if necessary. Place the mixture on a floured bench and gently pat into shape with a quick knead (about three pats only), cut into pieces and place on a baking tray, close together. Bake for 10-15 minutes, or until golden.
