A little parsley look-alike

These common leftovers often get tossed into the compost bin, but there are plenty of useful and delicious things you can do with them instead.

Composting kitchen scraps is something many Kiwis do, and on lifestyle blocks there’s also the option of feeding some scraps to our animals.

But there are also a lot of delicious things you can make or do with some of these ‘scraps’ in the kitchen that you might not have considered. Here are just three waste products from your kitchen that have a multitude of other uses.

Add peel to your vegetable stock. Boil the potato peels with all the other vegetable skins that you may otherwise throw away, including onion skins, carrot peels, leek ends, etc. Also save fresh herb stems for this, including parsley stalks, rosemary stems, coriander root, etc.

If I don’t have time to make either of these, then my potato peels aren’t wasted as they are the favourite food of my two kunekunes who will come to the back door to beg for them!
