GULA MELAKA Palm sugar
Palm sugar has a distinct caramel-coconut flavour and comes in round cakes about 5cm in diameter, varying in colour from a pale honey to dark brown treacle colour. It’s fun to work with but the cakes can be rather hard to crack so it is usually shaved with a knife.
The sugar comes from sap extracted from flower-bearing stalks of sugar palm. It is boiled into a concentrated syrup before being poured into moulds to set.
