Nutty fruit & berry cobbler
This is probably more of a winter dessert and should be eaten hot, straight from the oven. If your family loves it as much as mine, you will have to make a double batch. This can be made gluten-free using self-raising GF flour instead of regular, and dairy-free using coconut oil and nut milk. Coconut products are my new yum (see my November column). Unfortunately there is not much difference in using coconut sugar instead of cane sugar in terms of the 'sugar hit', but the taste is far superior I think. Coconut oil is being heralded as a super food and it can be substituted for butter in many cases, as in this cobbler recipe.
