Ricotta plum cake
MY RICOTTA plum cake is a great way to use up fresh plums from our heavily-laden tree. It’s tart and sweet, and you will think you are having dessert at an upmarket restaurant with this offering. If you don’t have home-made ricotta on hand, store-bought ricotta is fine – if you are using home-made ricotta, make sure to drain it well. I use a 22cm square cake tin which makes a high cake but you can use a jam roll tin if you want more of a slice – if you do, you might need more fruit for bigger area coverage.
