Ri­cotta plum cake

MY RI­COTTA plum cake is a great way to use up fresh plums from our heav­ily-laden tree. It’s tart and sweet, and you will think you are hav­ing dessert at an up­mar­ket restau­rant with this of­fer­ing. If you don’t have home-made ri­cotta on hand, store-bought ri­cotta is fine – if you are us­ing home-made ri­cotta, make sure to drain it well. I use a 22cm square cake tin which makes a high cake but you can use a jam roll tin if you want more of a slice – if you do, you might need more fruit for big­ger area cov­er­age.
