Why you shouldn’t peel your cu­cum­bers

Most of a cu­cum­ber’s nu­tri­ents, in­clud­ing valu­able phy­tonu­tri­ents, are con­tained in the peel. A one cup serv­ing of cu­cum­ber with the peel on pro­vides 14% of the rec­om­mended daily al­lowance of Vi­ta­min K for men

and 19 % for women. The peel is also rich in in­sol­u­ble fi­bre which acts like a broom in di­ges­tive tract. The in­ner part pro­vides sol­u­ble fi­bre which at­tracts wa­ter,

help­ing to soften fae­cal mat­ter. METHOD Chop up a cu­cum­ber and squeeze out the juice with a le­mon squeezer. Mix with equal quan­ti­ties of

glyc­er­ine and rose wa­ter. METHOD Peel half a cu­cum­ber and

chop into small pieces. Place the chopped cu­cum­ber in a food pro­cesser and puree. Put a piece of cheese­cloth or an open weave dish cloth over a glass bowl and strain the cu­cum­ber juice. Dis­card the solids. Add the honey

and stir gen­tly. Pour the liq­uid into a glass bot­tle. Shake be­fore us­ing. Squirt onto a cot­ton ball, sweep across face

and neck. Use im­me­di­ately. Use this cool­ing oil for sun­burn

and rough skin. METHOD Cut the cu­cum­bers into small pieces, in­clud­ing peel. Put in a pot with the cold wa­ter. Bring to the boil and sim­mer for 20 min­utes,

Strain and squeeze through fine muslin or a jelly bag. When cold, mix with rain­wa­ter, glyc­er­ine and ben­zoin

tinc­ture. Ap­ply to skin as re­quired.
