3 things to do with stale bread

NZ Lifestyle Block - - FARMHOUSE KITCHEN -

I DON’T particularly like using bread that has been frozen for sandwiches, but I do put anything that is going stale into the freezer so I can process it later into breadcrumbs or make a stuffing mix. Leftover fruit bread is made into one of Dave’s favourite desserts.

Bread & butter pudding

Ingredients 4-6 slices fruit bread 4 eggs 2 cups milk 1 tsp cinnamon or nutmeg 1 tbsp brown sugar 1 tbsp butter method Butter the bread and cut into matchbox-size pieces. Lay them haphazardly into a deep oven dish. Beat the egg, milk and sugar until well blended, then pour very slowly over the bread, making sure that all the bread is soaked in it. Sprinkle a little cinnamon or nutmeg over the top. Leave on the bench covered for half an hour, then cook at 150°C for 30-35 minutes until it is puffed up and golden brown. Serve with spoonfuls of vanilla ice cream. Delicious!
