very month, groups of foodies turn up at Soggy Bot­tom to learn how to craft their own meat prod­ucts, from the ba­sics of sausage mak­ing, to cur­ing and smok­ing meat. Jono says it was in­spired by the mem­o­rable time he en­joyed at River Cot­tage.

“It was one of those cold frosty sunny days and they took us to the farm­house and wel­comed us into this yurt with fresh cof­fee and a fresh flap­jack and I just thought ‘this is so slick, there’s a mar­ket for this in New Zealand, there’s gotta be.’

“I quite like run­ning cour­ses. You get such in­ter­est­ing peo­ple and such a di­verse range of peo­ple: you might have a farmer and you might have an elec­tri­cian, you might have a hunter but every­one is re­ally into food, you spend all day talk­ing about food, it’s great.”
