Green feeds are generally a rich source of vitamins and also contain pigments which give the egg yolks a rich, golden-yellow colour. Greens such as lucerne, silverbeet and lettuce are all excellent sources of vitamins and pigments. The colour comes from caretenoids which are naturally-occurring pigments that create the red and yellow colouring found in vegetation and in carrots, pumpkins, marigold petals and maize. The weed mallow can cause yolks to be a salmon-pink colour.
