Fer­mented tomato sauce (ketchup)

3 cups canned or bot­tled tomato paste 4 tbsp sea salt ½ cup maple syrup 3 cloves gar­lic, peeled and mashed ½ cup fish sauce ¼ tsp cayenne Method Mix all of the in­gre­di­ents un­til well blended. Put into a jar, mak­ing sure there is at least 2cm of space at the top so that it can ex­pand while fer­ment­ing. Leave at room tem­per­a­ture for about 3-4 days and then re­frig­er­ate.
