Stir-fried mizuna

For this recipe you need plants about 20cm tall with six or so stalks each. Serves 2.

IN­GRE­DI­ENTS

3 mizuna plants

1 cour­gette

1 onion

3-4 cloves gar­lic

12 basil leaves

4 but­ton mush­rooms

1-2 tbsp olive oil

½ tsp salt

freshly ground black pep­per

METHOD

Slice the cour­gette in half length­wise, then into 1-2 cm chunks. Coarsely chop the onion. Finely chop or crush the gar­lic. Cut the mush­rooms into quar­ters or more, de­pend­ing on size. Heat the oil in a wok or heavy fry­ing pan. Toss in the pre­pared veges and stir. Add the salt and pep­per then stir-fry for 4-5 min­utes. Re­move roots and ex­cess stalk from the mizuna and slice cross­ways into 1-2 cm strips. Slice the basil leaves sim­i­larly. Add the mizuna and basil to the wok, and stir-fry for another minute or so, then serve.
