Mixed milk magic cheese

Cathy and Rod gave me some of their beau­ti­ful milk to bring home and I mixed it with cow’s milk to make this Wens­ley­dale-style cheese. It is creamy and has a bit of a bite to it, well worth the ef­fort, and it ma­tures quickly too. It yields 1.3kg us­ing a mix of milks like I have, so I use a 1.5kg tomme mould. How­ever, this cheese can be made with ei­ther all sheep or all cow’s milk. All sheep milk will give you a 1.6kg cheese, all cow’s milk will give you a 1kg cheese.
