Mixed milk magic cheese
Cathy and Rod gave me some of their beautiful milk to bring home and I mixed it with cow’s milk to make this Wensleydale-style cheese. It is creamy and has a bit of a bite to it, well worth the effort, and it matures quickly too. It yields 1.3kg using a mix of milks like I have, so I use a 1.5kg tomme mould. However, this cheese can be made with either all sheep or all cow’s milk. All sheep milk will give you a 1.6kg cheese, all cow’s milk will give you a 1kg cheese.
